2 lbs pork back ribs, cut in 2” sections
Rinse in cold water. Put ribs in boiling water. Bring to boil again. Rinse in cold water. Drain. Fry on high heat with 1 tablespoon oil until golden. Remove from pan.
Sauce (I usually double)
1 T cooking wine (Shaohsing)
2 T soy sauce (Kikkoman)
3 T sugar
4 T vinegar (Chinkiang)
5 T water
Bring to boil. Turn to medium. Add meat and simmer 15-20 min. Bake 275 for 2 hours.
