1 bag of frozen spinach from Patel Bros (large block)
1 can tomato paste
Garlic powder (to taste) in lieu of 5 garlic cloves
Ginger powder (to taste) in lieu of 1 inch ginger
1 green chili
1/4 teaspoon red chili powder
1 large onion, chopped finely
1 teaspoon garam masala
1/4 teaspoon turmeric
2 tablespoons sour cream + 1 tablespoon milk (in lieu of heavy cream)
1 block of paneer (14oz)
Lemon juice (to taste)
Salt (to taste)
Not included: 1/2 tablespoon kasuri methi crushed, dried fenugreek leaves
Cook spinach in pot.
Puree spinach (if doing fresh chili pepper, add now).
Separately, saute onion with garlic.
Mix everything together.
Dash of lemon juice at the end if you want.
(The above, with salsas in lieu of chili pepper, made a very mild palak paneer. Maybe try increasing all spices by 50%)
