24 dried figs
1/3 cup honey
4 Tbspn orange juice
7 Tbspn lemon juice
2.5 cup unbleached flour (or a mix of unbld & wheat)
1/4 tspn baking soda
1/4 tspn baking powder
1 Tbspn canola oil
1/4 cup dark corn syrup (could probably substitute more honey, molasses, etc.)
2 egg whites
1 cup oat bran (can mix in some wheat germ also)
Combine:
Figs, honey, orange juice, and 2T lemon juice in food processor. Chop until figs are fine. Set aside.
Combine remaining ingredients (except bran) in mixing bowl. Beat for 3~4 minutes at med. speed. Add Fig mixture and beat until well blended. Roll into 20~24 balls. Place on cookie sheet and bake for 10 minutes @ 350 F, until warm and slightly puffy. Roll in bran.
