Meat
4 lbs boneless beef roast cut into 1.5" chunks
2 sliced onions
3 bay leaves
8 cloves
layer ingredients in crock pot or glass container.
Cover all with the following brine:
Brine
3 cups vinegar
4 teaspoons salt
2 teaspoons pepper
3 cups sweet red wine
After two weeks remove the onions, bay leaves, cloves.
Save the brine; drain the meat on a towel.
Fry each piece of meat until brown. Place in a covered casserole dish.
Gravy
brown 1/2 cup of flour in a medium-sized cast iron pan.
Mix with 2 cups of brine and 2.5 cups water.
Bring mixture to a boil.
Add 1.5 teaspoons salt and 1 teaspoon sugar.
Pour mixture over meat. Bake 2 hours at 300F
