Ingredients
1/2 cup butter, softened
1 1/3 cups flour
1/4 cup white sugar
4 eggs
1 1/2 cup white sugar
4 tablespoons flour
1/2 teaspoon baking powder
7 tablespoons lemon juice
Directions
1. Preheat oven to 350 degrees F
2. For crust: Mix together the butter, 1 1/3 cups flour and 1/4 cup sugar with a fork until crumbly. Press into an 8x8 inch pan and bake for 18 minutes. (Crust will look white. Do not brown.)
3. For filling: Blend the eggs, 1 1/2 cup of sugar, 4 tablespoons flour, baking powder and lemon juice. Blend until well mixed. Pour over pre-baked crust.
4. Return to oven and bake an additional 20 minutes. Turn off heat and let sit in oven for 1 min.
5. Remove from oven. Sprinkle with powdered sugar once cool. Let bars cool before cutting.
