2.5 lb beef roast
2 inch ginger
5 garlic
3 plantain bananas
2 onions
2 c salsa
1 c coconut milk
salt
Cut the beef in 1 inch cubes. Put in a frying pan with a little salt and water to cover. Boil about an hour until tender. I took the cover off at the end so most of the water would evaporate. Saute chopped ginger and garlic and add to beef. Set aside. Cut the bananas into 2 inch chunks and cut the chunks lengthwise in half. Boil bananas with a little salt until tender. Drain and set aside. Saute 2 diced onions. In a blender mix the salsa and coconut milk. Add the onions to sauce mixture. Add all ingredients. Serves 10.
