4 medium potatoes (1.5#) peeled, cubed
3 tblsp. canola oil
1 tsp. cumin seeds
2 tsp. fresh ginger
1/2 tsp. turmeric
1/4 tsp. cayenne pepper
1 tblsp. ground coriander
1/4 tsp. salt
1 tsp garam masala ( didn't have)
2 tsp. fresh lemon juice
Cook potatoes in boiling water 8-10 min. until tender; drain and set aside. Heat oil in nonstick skillet on medium. Add cumin seeds. Cook 10-15 sec. until roasted. Add ginger; cook and stir 5 sec. Add cooked potatoes. Sprinkle with turmeric, cayenne, coriander, salt garam masala, and lemon juice. Using wide spatula, stir in lifting and turning motion to coat potatoes with spices. Avoid braking potatoes, Stir fry 3-5 min. until lightly roasted.
