Graham Cracker Crust
1 - 5 1/3 oz packet graham crackers, crushed (about 1 2/3 C)
1/4 C sugar
6 tblsp butter, melted
Combine all ingredients, mixing well. Firmly press crumb mixture evenly into 9" pan. 375º
Filling
3 - 8 oz packages cream cheese, softened
1 C sugar
3 large eggs
Vanilla extract to taste (a teaspoon or so)
Lemon or lime juice (same)
Beat cream cheese with mixer or whisk until creamy; gradually add 1 cup sugar, beating well. Add eggs, one at a time, beating after each addition. Stir in vanilla. Pour into prepared crust. Bake at 375º for 35 min or until cheesecake is set.
Put in fridge overnight, uncovered or loosely covered (or else it'll sweat).
