1 cup crisco
1.5 cups sugar
2/3 cup peanut butter
2 eggs
1 teaspn vanilla extract
2.5 cups flour
1 teaspn baking soda
1/2 teaspn salt
2 cups peanut butter baking chips
[optional]: vanilla sugar for rolling
Preheat oven to 350F. Cream together crisco, sugar, and peanut butter. Beat in eggs and vanilla. Add flour, baking soda, salt, and peanut butter chips; mix well until combined. Using a teaspoon of the dough, roll into balls. Roll in vanilla sugar if desired. Place on greased cookie sheet. Using fork, press ball in one direction, then again at 90 degrees. (Dip fork in water to prevent sticking.)
Bake 350F for 12-15 minutes until light golden brown.
