This is a breakfast meal prepared the night before.
2 cups cooked rice
2 cups milk
1/8 teaspn salt
1/3 cup sugar
1 tablespn butter
2 eggs
1/2 lemon rind grated (optional)
1/2 cup raisins (more to taste)
Mix all, place in greased casserole dish in fridge overnight.
In the morning, place in oven, then heat oven to 350F. Bake 45-60 minutes
