9" pie crust
3 eggs
1/2 cup butter (1 stick), melted
1 1/2 cup sugar
1 tablespoon flour
2/3 cup buttermilk
1/4 teaspoon salt
1 1/2 teaspoon vanilla extract
1 teaspoon lemon extract
1 teaspoon minced lemon peel
Preheat oven to 325F
In a bowl, combine eggs, butter; beat until frothy
Add sugar, flour; mix
Add buttermilk, salt, vanilla, lemon extract, lemon peel; stir
pour into pie crust
Bake 325F for 10 minutes, then raise to 350F for 50 minutes
