Step 1: crust
Preheat oven to 350F
Get 9"x13" glass pan
2 cups flour
2 tablespoons sugar
1/4 teaspoon salt
1 cup crisco
2 egg yolks
Separate the 2 eggs, placing whites in metal mixing bowl.
In a large bowl, combine dry ingredients except sugar. Add crisco, mix. Add sugar, mix. Add 2 egg yolks (yellows)
Spray 9"x15" glass pan with Pam. Press crust into pan bottom
Place pan with crust in oven for 15 minutes
Step 2: rhubarb filling
[Do this step while waiting on step 1]
4 cups of diced rhubarb
4 eggs
2 cups sugar
2 tablespoons flour
Separate the 4 eggs, placing whites in the metal mixing bowl with the previous 2
Combine rhubarb, egg yolks (yellows), sugar, and flour.
Place on top of crust
Bake 350F for 30 minutes
Step 4: whipped egg white topping
6 egg whites
1 cup sugar
1 teaspoon cinnamon
Beat 6 egg whites to stiff (forms peaks).
slowly add sugar to beaten eggs, then add cinnamon
Place on top of rhubarb
Bake at 350F for 20 minutes or topping is light golden brown
